These mini cranberry brie bites are great finger snacks and appetizers for get-togethers, holidays, and potluck. They are super yummy with buttery, flakey puff pastry crust, gooey baked brie, and sweet, tangy cranberry sauce. Preheat the oven to 400°F and prepare a mini nonstick cupcake pan. Lightly grease the cupcake pan if desired.
On a clean work surface, unfold the puff pastry. Roll the puff pastry sheet to 9 by 14 inches, about ⅕ inch thick. If needed, lightly dust on some flour to prevent sticking.
Cut the puff pastry into 24 smaller, equal sheets. Press a sheet of puff pastry into each mini cupcake cups.
Top each puff pastry with a piece of brie, about 1 teaspoon of cranberry sauce, and a piece of walnut half or some walnut pieces.
Bake the pan of brie bites for 13 to 15 minutes, or until the puff pastry is golden and flakey. Remove from oven and let the brie bites cool. *Sometimes the cranberry sauce may slide off the brie from the puff pastry puffing up and the cheese bubbling. So spoon the cranberry sauce back into their puff pastry cups if needed.*
Once comfortable to handle, slightly twist each brie bite to remove them from the pan. If desired, garnish each pastry cup with a tiny sprig of rosemary. Enjoy!

Puff pastry dough - These are available in the freezer aisle of most grocery stores. If you cannot fine them, you can also use pre-made crescent dough.
