Ingredients
For the chicken
1½poundskin-on chicken thighsdeboned (about 4 boneless thighs per 1.5lb/680g)
Cut the chicken thighs into 1 inch (2.5cm), small bite-size, pieces. Try to be even with the skin. Then place the chicken into a bowl and season with salt. Mix well and finish by mixing in the oil. Thread the chicken chunks onto skewers.Optionally, let the chicken sit and marinate for about 30 minutes before skewering.
If grilling and using wood or bamboo skewers, make sure to soak those skewers in water for at least 30 minutes to prevent them from burning
If grilling, start preheating the grill on medium heat.
In a bowl, make the sauce by mixing together all the sauce ingredients until the sugar has dissolved. Set aside until needed.
2 tablespoons soy sauce, 2 tablespoons sake, 2 tablespoons water, 2 tablespoons granulated sugar, 1 teaspoon Chinese five spice powder
Stovetop method:Lightly grease a pan large enough to fit the skewers and place it over medium to medium-low heat. Once the pan is hot, arrange the chicken skewers in the pan and cook on each side for about 2-3 minutes until lightly golden brown and about three-quarter (70-80%) of the way cooked through. As the chicken cooks, the skin will render and more fat will appear in the pan. Wipe away excess grease as needed with paper towels.
Once the chicken is three-quarter of the way cooked, add the prepared sauce and let the chicken simmer in the sauce for about 5-7 minutes, until the chicken is cooked through and the sauce has thickened and look glossy. Baste the chicken and rotate the skewers every so often.
Grill method:When the grill is done preheating and is hot, place arrange the skewers on the grates. Rotate the skewers every so often. Once the chicken is about about three-quarter (70-80%) of the way cooked start brushing the chicken with the prepared sauce every 30 seconds, until the chicken is cooked through.
Serve:If desired, garnish the chicken skewers with some sliced green onions and top with a sprinkle of togarashi for extra flavor and a little kick. Enjoy while warm.

Please refer to the post above for photo reference, tips, storage, FAQs and more!
If possible, we highly recommend using skin-on chicken thighs. The skin provides extra flavor and helps keep the chicken extra juicy. Skin-on, boneless chicken thighs can be hard to find, so we've included steps and photo guides to help guide you if you wish to debone your own chicken thighs. You can then freeze and save the bones for stocks!
